Tips / tricks for feeding a baby / juvenile

I have been keeping Leopard Geckos for years, and wanted to try a Bearded Dragon. I am not sure exactly how old my beardie is, but his length from nose to tail is around 7 inches. Its his second day home, and he's really loving to bask, and runs around a lot. Very active.

My issue is that I'm having trouble with large meals. Every morning, about an hour after his lights come on, I try to feed him. I can only get him to be interested in food for ~3 mealworms. Then, won't eat again. I was able to trick him to eat a piece of a bell pepper today. But now, back to basking again, and doesn't show interest in food. I have read i'm supposed to be feeding much more than this.

What are some good tips and tricks for getting a little guy to eat more? Or, am I feeding him what he needs and it just seems (to me) like I should be feeding more? My geckos never really ate too much either.

Also, please don't make me buy crickets. I can't keep them alive for more than a day.
